Sticky Toffee Pudding Recipe

Have you ever been defeated by the main course? No room for dessert even though it sounds so good! How about trying a dessert so good that you can’t stop talking about it? Your friends either don’t believe you or are desperate to try it themselves. If you are up to the challenge this give this a try! Chef Callum has exclusively revealed his recipe for our home made sticky toffee pudding. Always a crowd pleaser this is one that you will want to make again and again…

Ingredients (Makes approx 12 servings)

  • 4oz butter
  • 12oz Caster Sugar
  • 1 lb dates
  • 3 eggs
  • 1lb plain flour
  • 2 tsp Baking Powder
  • 2 tsp Bicarbonate of soda
  • 1 pint of water
  • 1 tsp vanilla extract


  1. Preheat the oven to 180oC (Gas Mark 4) and grease and line a suitable baking tin
  2. Cream together the butter and sugar in a mixing bowl until light and fluffy
  3. Add the eggs, flour and baking powder to the mixture and stir to combine
  4. in a heatproof bowl add boiling water to the dates with the bicarbonate of soda and leave to soak  for 30 minutes
  5. drain any excess water from the dates and add to the pudding mixture. Stir to combine
  6. spoon evenly into baking tin and bake for 20 – 25 minutes.
  7. Remove tray from oven and if cooked leave to cool
  8. Once tin is no longer hot to touch remove pudding by turning tin upside down and leaving to cool on wire rack
  9. Divide into 12 even portions
